About Us

Head Gourmands

Chef-owner Peyton Barrell and his partner, Katie Grabach have a passion for procuring and creating high quality foods and delivering extraordinary culinary experiences. 

After graduating from the University of Alabama, Katie and Peyton spent three months traveling through Eastern Europe exploring their love of food, wine, and culture. Upon their return to the states they relocated to Richmond, Virginia where Peyton got his start at renowned restaurant, Acacia and Katie managed a boutique on the famous Cary Street in the Museum District.  From there they moved to New Orleans, where Peyton attended the New Orleans Culinary & Hospitality Institute.  They then made the leap to New York City, where both landed dream jobs - Peyton cooking at Michelin-starred restaurant Bâtard, and Katie working in the Events department at the famous Marriott Marquis in Times Square.  When COVID began, and with the city shut down, the couple began creating the concept of Gourmand.  Because of their attachment to New Orleans, they could not have thought of a better place to launch Gourmand, and so they returned to their favorite city to do just that!

Gourmand aims to bring unique, high-end products to our community, making them as accessible as possible.

Whether it be a massive cheese & charcuterie spread, or a 9 course tasting menu, we are committed to bringing you a customized dining experience by utilizing the highest quality ingredients we can procure. 

Because of our love for classic European style charcuterie, we have developed a line of products that encompasses all of our favorite things to eat! We focus on items like foie gras, terrines, rillettes, cured meats, and any locally sourced products we can utilize.  Our products are perfect for you to treat yourself, enjoy with friends or family, bring to a party, or give to someone as a gift!

A Move to Markets.

Just before sunrise on a spring morning, Rome Julian will stare up his stake bed truck, revving the engine to a steady purr. He'll turn the dial on his radio, releasing New Orleans’ most iconic soundtracks, courtesy of WWOZ, out of the open doors. Julian might worry about the brass band music disturbing the neighbors at this hour, if he had any neighbors. Boots crushing the dewy grass, he'll begin to load flats of vibrant microgreens glistening in the cobalt blue twilight, followed swiftly by radishes, turnips, cabbage, kale, lettuce, and green onions. Just as the sun threatens to break the horizon, roosters will crow in protest of his imposing figure collecting cartons of eggs from their warm coops.

Chef Peyton Barrell makes classic French charcuterie and more for Gourmand New Orleans

We walked into Vino Fine Wine & Spirits one day, and I was like, “Hey, out of curiosity, why don’t you have cheese and charcuterie?” And they were like, “Well, you have to get a health department license.” You have to get a grease trap just to cut a piece of cheese. I was like, “What if we provided you with cheese and charcuterie, and what if we offered it on consignment, so it’s no risk to the shop?”
